Winemaking
Timely spring and summer rainfall across Victoria and South Australia resulted in an even budburst with bunch and berry sizes up on previous years. Mild ripening conditions throughout January followed by some heavy rain in February caused some concern, the final stages prior to harvest were dry and warm with the weather during vintage being close to ideal.
The Victorian fruit was particularly impressive and resulted in a significant percentage increase in this years blend. Fermentation was performed in a combination of rotary fermentors and stainless steel tanks with individual parcels selected for oak maturation before coming together for the final blend.
Tasting Notes
Dense purple in colour with sweet mulberry fruits and smoky oak aromas. The increased Victorian component contributing characteristic minty flavours and enhancing structure. Medium to full bodied in palate weight displaying firm tannins and a savoury finish. An ideal accompaniment to red meat and premium cuts of prime beef. Will continue to improve over the next 2-4 years.
